拉条子,又称新疆拌面(维吾尔语称“兰格曼”),是新疆特色名菜,以手工拉制的白面条为主料,搭配羊肉、洋葱、西红柿及应季蔬菜炒制的配菜,以菜拌面食用,口感筋道爽滑。其起源有山西骆驼客传入、维吾尔族发明、回族发明三种说法,其中回族同胞在配菜开发及制作工序标准化方面贡献突出。 制作工艺包含盐水和面、多次醒面等核心步骤,传统做法通过特定手法拉伸面条,煮制时需盖锅焖煮三五分钟以保证口感。配菜涵盖牛羊肉及白菜、豆角、蘑菇等时蔬,标配红辣椒、青辣椒、西红柿、洋葱用于调色提味。食用时可选择过凉水或直接装盘,常佐生蒜并配面汤形成“原汤化原食”的地域习俗。作为新疆各族群众日常主食及待客佳肴,拉条子成为新疆饮食文化的重要符号。
