臘腸 腊肠
腊肠是一种腊味食品,是中国江浙、四川及广东等南方地区常见的食物。传统的腊肠是以猪肉注入利用动物肠脏制作的肠衣,再天然风干制成,但现在工厂生产的腊肠,肠衣多以人工方法制造,并以热风干燥来提高生产效率。腊肠不但可单独食用,也是制作多种粤式食品的食材。

腊肉是中国腌肉的一种,主要流行于四川、湖南、重庆、贵州、江西和广东一带,但在南方其他地区也有制作,由于通常是在农历的腊月进行腌制,所以称作“腊肉”。
